Green Iguana Desktop Wallpaper - Free

I had fun making the first free desktop wallpaper, so I decided to create another one. This wallpaper is a huge green iguana with a mohawk. The download link is below the picture.

Mexican Salsa Recipe

I make great salsa. No modesty here. My salsa rocks. I'll give you the basic ingredients and techniques for making a typical table salsa. Try it for yourself. Even though the ingredients are similar in most salsas no two cook's salsas every taste the same.

I learned how to make this salsa by watching our next door neighbor, Lucy. Doing everything the same as she did, my salsa never tasted anything like hers which was phenomenal. At first, I was disappointed because I was unable to replicate her version but I stuck with it and realized that I was making great salsa, just totally different. Once you start making your own salsa you'll never be able to go back to store bought.

Authentic Mexican table salsa is easy to make and tastes far superior to any store bought salsa. Mexican cooks use ingredients on hand to make vibrant, flavorful, and healthy salsas.

To make the salsa you can mix and match the following ingredients to suit your taste:

  • Tomatoes preferably Roma but regular tomatoes work fine
  • Tomatillos
  • Onion
  • Bell peppers
  • Jalapeno chiles
  • Serrano chiles
  • Poblano chiles
  • Garlic
  • Cilantro
  • Lime juice

The most important step for making a great salsa is charring the vegetables as shown in the picture below. You really want to char the vegetables. Make sure they are good and burnt all the way around.

To char the vegetables hold them over an open flame on a gas stove. If your stove is electric, preheat a large frying pan on high and char the vegetables in the pan turning often. Many Mexican recipes have you peel the chiles. In this case, the charred bits give the salsa a deeper smokier flavor so you want to leave the skins on.

Recipe for a Typical Version of the Mexican Table Salsa

Ingredients:

  • 6 Roma tomatoes or 3 large regular tomatoes
  • 1 Medium white onion chopped
  • 3 Jalapeno or serrano chiles (add more or reduce quantity to taste)
  • 1 Garlic clove
  • 1 Cup loosely packed cilantro
  • 2 limes (the smaller Mexican limes are the best)
  • Salt
  • Makes 5 to 6 cups of salsa

Char the tomatoes, onion, garlic and chiles. Remove from heat and let cool. Remove the tops of the tomatoes and chiles.

Put all ingredients in a blender including the cilantro and the juice from two limes. I like to add two tablespoons of olive oil which gives the salsa a richer flavor. Add salt to taste. Blend until coarsely ground. Do not over blend.

Puerto Vallarta Restaurant Guide - Beck's Best

For anybody who will be in Puerto Vallarta, I recommend buying a copy of Gary Beck's Restaurant Guide. Gary makes sense of the Puerto Vallarta dining scene with over 360 comprehensive restaurant reviews. His guide is a true labor of love based on nearly thrirty years of experience in Puerto Vallarta.

Just so you know, I don't make anything by promoting his restaurant guide. I have included it because it is an incredible resource for people who enjoy discovering new restaurants. As they say in Mexico, buen provecho!

Children's Summer Yoga Course in Puerto Vallarta

Anna our friend from Davannayoga sent me an email regarding a children's yoga course that she is offering this summer. I have watched her teach her children's courses and she has a wonderful way with the kids. If you have kids, send them. They will love it.

One of the things I like about Anna's classes is her focus on healthy eating. She has a way of motivating kids to think about what they eat and actually gets them to try new healthy foods. Sometimes the kids even develop a liking for healthy stuff. That's not easy!

A few weeks ago, we were invited to a birthday party in Sayulita by some friends who have a great house in the Colonia Tamarindos.

I wandered around the neighborhood taking pictures. Sayulita is a picturesque town that reminds me of Puerto Vallarta would have been like 30 years ago. Here are a few of the pictures I took.

Red Cabbage Restaurant - Downtown Puerto Vallarta

Last Friday, we were looking for a good place to eat. We had planned on going for our favorite tacos but when we arrived they hadn't even put the meat on the rotisserie yet. We love the tacos but we weren't ready to wait an hour for them to be ready.

Eating out in Puerto Vallarta can be like cable television. You have 700 choices and nothing interests you. We started playing the usual, "what do you want to eat? I dunno. What do you wanna eat game."

After running through the list of all 700 hundred places we could eat, we settled on the Red Cabbage, an old favorite.

If you have never gone, the Red Cabbage can be hard to find on your own. They easiest way to get there the first time is by taxi. Most of the drivers know where it is.

For the summer, the Red Cabbage is having a half-priced, "Fiesta de Chiles" special on their stuffed chile dishes. I was pleased with this because I had already planned to order the chiles stuffed with ground beef when they told us about the special.

I wish I had remembered to bring the camera with me. the presentation of the food was beautiful.
